I want to open up a sausage shop and am looking to find some great European sausages. Can anyone help?

I too agree that Polish sausages rock. They are the best. I am thinking now of making my own. How hard can it be? mmmmmm

I’m polish, so I can say that do sausages isn’t very difficult. Before 90’s a lot of people kill pigs and did sausages themselves, Taste of hand made sausage is much better then normal from store. I don’t remember exactly but I remember that on the end is smoked by short time.
I was thinking of this not long ago. I did a little research and discovered that it is very easy to do. If smoking is your thing, you might try the smoker at Costco. JungHu had one not long ago but I recall a friend made one for his balcony by simply taking an old middle size frige and putting a hotplate in the bottom and kept it stoked with wood chips. I hear from a previous post that the sugar cane peelings work good. However, a trip to the apple orchard would yield lots of small chunks of apple wood to add to the burner. Use a throw away style heavy duty pan on top of the hotplate in which to put the chips. Cut a hole in the top of the fridge and put in a vent with a damper. Jury rig some hooks so that your meat hangs freely in the fridge. Most hardware stores will have all the stuff you need. Keep your eyes open for one of those fridge repair shops with all the worn out items stacked around. A little effort but WOW think of the awesome stuff coming out. Fish, pork, beef and, of course, the great sausages. Here is a site that I looked at that might help with equipment and receipes.
