My 90 days tourist visa expires end of May. I have been informed by Southern immigration office in Kaohsiung that there is an automatic 60 added to this visa for which no action need be taken. However as a Canadian passport holder I have the option of applying for a 90 day extension with some supporting documents. The question is if I were to take advantage of the extra 60 days granted to all and at the end of that period to apply for the formal 90 days extension, would that be possible or am I taking advantage and can only do one or the other?

You can stay until the end of August with the automatic 90-day extension (no need to apply). See the FAQ at the bottom of this page: https://www.boca.gov.tw/cp-220-5609-e00b6-2.html

The covid related 30 day extensions began on March 2020 and will end May 2022:

Update: this may not be related to the automatic extensions but to the ones that had to be applied for each month.

What does this mean?

Actually NIA may not be ending the automatic extensions. The extensions based on flight cancelations that had to be applied for each month seam to be ending according to NIAs article. Hopefully an English version is released to make it more clear.
