Texas Tom’s is the real deal. (He only does popups, no restaurant.) Baba Kevin’s and Ed’s Diner don’t even seem to me like they are smoked. Mighty Quinn’s is decent. Haven’t tried Bogart’s yet but have heard it’s dry.
