It looks like they say 韓國冷麵 (Korean cold noodles), using a translation from Korean instead of saying 涼麵 (cool noodles). My experience is that restaurants use their chosen style of noodles and other various things, and you have very little say in making selections you prefer. I imagine buckwheat noodles can’t be found for this dish in Taiwan.
For sure, the buckwheat cold noodles are already a thing in Taiwan. I googled your Korean dish mention though:
it seems it’s a mostly soup (sauce?) Based dish. Pardon my ignorance, I’m not a huge fan of Korean food, but open to it. my family really likes some of it as well.
Wondering what that soup based noodle dish would be called in mandarin though. I kind of can see how it might be as simple as “Korean cold noodles” hehe, but I bet it goes deeper than that. It can’t just mean 韓國冷麵. There is soup and there is the dry version (like 711). Wouldnt be surprised either way, any restaurateurs can weigh in? I loath promoting the simplistic name forms that taiwan is ever more famous for. This is how we get people hating Taiwanese food in the first place, dumb names, poor marketing and ignorance extrapolated lol.
