Cream whippers

Every now and then I get the urge to whip up a batch of cream, and a while ago I was pleased to find some nitrous oxide cream whipping cannisters in the Mami store. I was going to buy the machine for the whipping, but then saw that the Mami store isn’t selling the cannisters anymore. Anyone know where I can buy them? (PS I’m very particular about using nitrous oxide cannisters to whip my cream - nothing else will suffice).

Harmless? A friend of mine’s face turns blue when she does whippits! It’s kinda freaky deaky to do them, too. You feel for those three or four seconds that you’ll never snap out of it and your head will just shoot off your neck. :wink:

oh yeah, it’s definitely not good for you. now if i could just find a dentist who uses it :slight_smile: i’d heard about people here in the past going to the local gas distributor and walking out with a tank of the stuff, ha ha ha.

Used to work in an operating theatre alone at night. You know the score, bit bored, no operations. Found myself stupidly lying on the operating table one night and half an hour had vanished from the putting the mask on mask on to it slipping off. Spooked me.

Bu, I know you said that you’re very particular about whipping your cream. However, if you can’t find the gas, you can always do this instead:

Put a large glass or metal bowl and a metal whisk in your freezer for a few hours, maybe overnight. Add cold, heavy whipping cream to the bowl after its temperature has been lowered, add powdered sugar (if you like) to taste and a drop or three of vanilla (if you like). Whisk until it’s as stiff as you like, but don’t overwhisk it or you’ll get butter (don’t use a blender). It’ll be pretty stiff by the time it turns to butter–if it can turn to butter at all, since this depends largely on the quality of whipping cream you start with. If it loses its gloss, then stop whipping. If you want to add anything else to the cream, just fold it in gently to the whipped cream (chocolate, fruit, etc.). It really doesn’t take that much effort, nor that much time, and it’s actually–oddly–kind of satisfying to take heavy cream to stiff peaks in just a few minutes. By the way, if you store any whipped cream for more than 20-24 hours in the fridge, it’ll pool water. There’s nothing you can do short of adding powdered gelatin at the first (yuck–although the cornstarch in powdered sugar, like gelatin, also acts to emulsify the fat and hold the water).

Ain’t nothin’ like whippin’ up a fresh batch for Sunday morning coffee. Or even just stand at the open fridge door with a big ol’ spoon and dig in…

if that coffee proves to be too weak, u could always just take hits straight off the balloon…that might make for a really interesting Sunday morning…

I prefer to put it on and then whip it.

I did this to top pumpkin pie last night, and it worked like a charm! In fact, the whipped cream was better than the pie! :laughing:
