I recently quit my job at a school to take up employment at cycling company. This thing is I will be unemployed for about 2 months which is when mt contract starts. During this time I do not want to be without health coverage. Is there any way to mai0ntain my health coverage while I am temporarily unemployed.

Go to the NHI office. If you have an APRC you can register for health insurance like any other Taiwanese citizen. I assume that you still have your NHI card, you basically need to report a change of tou2bao3 dan1wei4 投保單位.
I don’t know whether you perhaps need some paperwork from your previous employer, in my case, I used to have a rep office, and was basically my own toubao danwei. I needed to provide a letter from MOE that stated the termination of the rep office registration. I would assume that your previous employer has already reported to NHI that you are not isured through him anymore, so it should really be easy.
Anyway, it is possible to be insured without an employer, you will probably end up paying something like 700-800 NT per month. I’d say, just go to the NHI office, and ask them.

He would be eligible, except he has left Taiwan twice in the last 6 months - both for a day, but returned both on the same day (same day turnaround).
Does anyone know if the residency is - you can only leave once or it goes by actual days in Taiwan?
Seeing as residency is deduced by immigration/tax authority by actual days and not by how many times you leave, shouldn’t that be the case here?
