Those wetback systems are quite common in Germany. They need to be kept over 60°C all the time to prevent the growth of Legionella inside the water tank and inside the pipes (which also wastes quite some energy if the hot water isn’t actually needed most of the times). Not an issue with the on-demand systems.
Yes, there should be ones available in different peak capacities (measured in liters). Of course, water pressure needs to be able to keep up…
See 瓦斯熱水器 - 台灣櫻花 for example: They offer systems between 10L and 24L (per minute, I think).
Also, the newer models are mostly digitally controlled and allow setting a constant temperature.

It is a normal term used in the southern hemisphere. Have you been there at all? Nothing derogatory about it. I have one at my house in Alishan. I have to collect faggots for it and use a ferro rod to start the fire which is underneath my wetback.
