I’ve seen my parents do it and I think I know what the steps are. They did smoke theirs though which, unfortunatly, I will not be able to do. Has anyone tried anything like this.

There are small smoker units that can easily fit on a balcony.
Nee, nee, last time my brother came to Taiwan I had him bring smoking bags with him. They are bags with an inside lining of natural woods and sugar. Just put the saugages in and pop 'm in the oven … Several kinds available, from light to heavy smoke, fish, meats.
Haven’t had the time to try it yet but am going to soon.

I’ve been doing some more reading into the sausage making thing, and it seems that you need a curing agent. It goes by the name of Instacure No.1 Has any one ever heard or seen this product. It’s a necessary ingredient in order to prevent Botulism poisoning.
