I currently moved to Taiwan and start lesson learning the language. In the USA, I was a drafting for a professional engineer that did drafting work for telecommunications. I have an AA and worked for him for 6 years. My current visa I obtained is a family visa. I was told that means I can legally work in Taiwan.

Visa wise you would be ok, but as to actually finding a job, or even a decent paying one? That’s another question entirely. Not impossible though, IMO.
