You can use USD a lot in Cambodia. Take singles
Cambodia uses U.S. dollars for major transactions, which in practice means anything over $1. So you pay in dollars and get riel back as pocket change. So it’s not at all necessary to convert any Cambodian money. Though the government keeps trying to push using the local currency, it never seems to take. As the riel is literally worth less than the paper it is printed on, most people prefer dollars anyway.
I’ve never been to Vietnam.
As others have said, I would just get USD here for Cambodia. For Vietnam, I’d imagine you can easily change TWD there at a decent rate, though USD might be slightly better (I’ve never been to Vietnam though, I’m just guessing based on other places in SEA).
Have you been there recently? I was reading that fewer and fewer people/businesses are accepting US dollars. Especially 1, 5, and 10 dollar bills.

I was there 4 years ago.
I withdrew US dollars from the ATMs. The only time I had a problem was when I paid with a $5 bill at a fruit shake stand and the guy gave me change in $1 and $2 bills. No other place would accept the $2 bill and I couldn’t get rid of it, so a few days I went back to the shake place and paid for another shake with the same $2 bill. Of course now he had to accept it. And so the cycle of that $2 bill continues, passed on to another unwitting customer, who has to pass it back…
I’ll keep an eye out for that $2 bill. With my luck, I’ll probably end up with it.
