Meat Loaf for the small kitchen

You will need:
1 metal baking pan that holds about 2 quarts and will fit in your toaster oven. (The disposable aluminum loaf pans found in your local market work well but you will need 2-3 - they come in a pack of 5)
Large mixing bowl (2 quart)
about 2 pounds of ground pork and/or beef
1 medium-sized yellow onion
3 cups Quaker oatmeal (quick or regular) - (6 regular-sized slices of bread work as a substitute but oatmeal works better)
3 eggs
1/2 cup catsup
salt and pepper (ground red pepper if you like some spice)
Optional: Steak sauce - HR is now found at Costco
1/4 cup veg. oil

Put the ground meat, eggs, 1 finely chopped onion, oatmeal, 1 Tablespoon of salt, healthy sprinkle of pepper (chili peppers if desired) 1/4 cup steak sauce and 1/4 cup veg oil in the bowl. Remove rings, etc and smash all this up with your hands. Mix it well, squishing it all around until it is very well mixed. (If you use the bread option, just tear the pieces up before you add them. I like black rye for this but, alas, more difficult to find)
Shape the mixture into a loaf like a bread loaf to fit your pan(s). Make a groove down the middle that will hold the catsup and pour it in.
Bake at about 170 C for about 1.5 hours. This will vary depending on your oven so check it occasionally by slicing while it is still in the pan and spread the meat a bit to see if it is still raw looking in the middle. If the top starts to get too done before it’s ready to come out, put a layer of aluminum foil over the top and finish baking. When you think it’s done, let it cool a bit. Slice and enjoy. Leftovers make fantastic sandwiches.
Just a baking pan and a bowl can make a great dinner, leftovers for breakfast and sandwiches for lunch. Freeze a loaf for later.

Very good again. You put oatmeal in twice though. Mom always used crackers, but oatmeal sounds good. She also had a nice tomato glaze on top. (I guess that’s what the ketchup is for.)

Next time, post your recipe after lunch when I’m not so hungry already!

Thanks. I repaired the receipe. Crackers work well too. As a further option, some don’t want the extra fat and carbs so they don’t add any bread or grains. They allow the fat to accumulate on the top of the loaf instead of being absorbed by the bread or grain. Then they can then pour the fat off before serving. This just sounds toooo healthy for my taste.

A great one, tried it out recently. The remainder of it also did well sliced up and fried up for a Sunday brunch.

One minor thing I might add would be to get rid the the ketchup and try to put some slices of smoked bacon over the top instead.

That would change the taste a bit - we call that “fake hare” in Denmark, due to its more game-like taste.

I once bbqed a meatloaf and added milk to the recipe. It was the best meatloaf I’ve ever been able to make here. Really juice and tender. If you want the reciepe, pm me.
