I’ve tried finding info on this, but it’s been pretty difficult as some of it just goes over my head. It seems like this should be possible, but I’m looking for some confirmation on that.
I have a jailbroken/unlocked iPhone that I brought with me from the US. I’m a fairly heavy data user, but not so much that I have to have it available at all times. In other words, I can wait until I get to a wifi signal if I need to. Would it be possible to use a prepaid SIM card for phone/texts without data in my iPhone, and disable cellular data usage on the phone so that I can only access data through wifi? That would make things so much cheaper for now until the money starts coming in (just got to Taiwan). Any more info needed, just let me know.

Yes, the newer versions of iOS have a switch to disable data usage for situations exactly like this. Just dig around under settings.

I have used the data off feature for exactly this scenario so I know that it works. (Although this was in Singapore, I assume it will be no different here)
Do make sure to use that switch in settings if you decide to do this with a prepaid “voice only” SIM since a number of the “voice only” prepaid SIM cards here will do data, but at a very high $/kB rate. A batch of emails coming in is enough to wipe out 100s of NT from a card if left this way. The switch is in Settings / General / Network / Cellular Data.
Also, if you are not staying long term and want to get a prepaid SIM with unlimited 3G data (at roughly 12USD/5days or 73USD/month) search this forum for “prepaid SIM unlimited 3G Taiwan Mobile”
