> Ikea offers an affordable carbon steel pan

Since it requires seasoning, that means you can’t put it in the dish washer?

I don’t have a dishwasher, but from what I’ve read, carbon steel pans and dishwashers are not good friends, so don’t.

I wash mine by hand and then finish drying it on the stove, paying particular attention to the areas by rivets where water might linger. Then a light coat of oil using a paper towel.

Perhaps I should add this info for carbon steel newbies: If you get a carbon steel pan and it comes to look like some grungy thing you might imagine seeing in the discount box at a flea market, don’t sweat it. It’s fine that way, really (as long as you don’t let it rust).

I like my 10" pan so well that I’ll probably get a 12" pan for bigger jobs.
