I bought a turkey for the office from Bogart’s and it was so good. They picked the meat off the bones. 14 pound turkey for 4380. About 20 people served.
For chicken, I’m with Andrew. Roast it with some lemon, salt, pepper, olive oil, rosemary until juices run clear and crispy skin.
Truss the legs or spatchcock.
I also have a tiny oven but can still roast a bird.
Or do a stovetop Coq au Vin. https://www.thekitchn.com/coq-au-vin-recipe-23690793
It probably depends on the store, the 2 Costco ones I have tried were dry and wrinkly and trying to cover a bland meet with extra seasoning, not balanced at all.
The 21C in dream mall was bad but its a food court so didn’t expect much, now the 21C in Pingtung City is a lot more hit than miss, sealed in the foil bag keeping all the juices in.
Mine was around 2000nt, it even has a rotisserie, got it in a sale about 6 years ago and seams to handle everything from a soufflé to a roast. first was a bit of a trial and error to get used to the equipment.
From the comment I would guess he is using one of the small toaster ovens with only an upper element, cooking a leg/thigh placing it skin side up, the top part will toast, the bottom part will get a little reflected heat but not enough to cook it through.
Just search for 桶仔雞 on Google Maps. There are dozens in greater Taipei alone and more elsewhere. Quite a few in the city proper. My favorite is 台雞店 on the road to Wulai. It it were me and I celebrated Christmas, I would just go up there and gorge myself and friends on roast chicken and a crate of 18 days.
Yeah, sounds similar to mine. I haven’t really bothered with the rotisserie function though (I tried making doner kebab once, but it was a total failure lol). I’d like it to be a bit bigger and get a bit hotter, sure, but for most applications it’s perfectly fine.
Yeah possibly… but those small toaster ovens are completely the wrong appliance to use if someone wants to roast or bake anything. I think this should be extremely obvious — there’s no point even trying…
I really just wanted to do the experiment and test out the rotisserie function. After that, I resorted to different kinds of kebabs in a grill or air fryer (way better).
I think it’s an insulation issue too. I basically always run mine at maximum unless I’m baking brownies or something. Mine gets up to around 230°C when I’ve checked it with thermometers, probably depending on the ambient temperature, but a bit hotter would sometimes be nice for bread and pizza and stuff.
The skin needs to be dry before it’s put in the oven.
EDIT: Sorry, the skin is overcooked. I don’t what you’re doing wrong then. If you’re just cooking legs then maybe fry them in a pan first and put them in the oven upside down? It might work.
Always wanted to try the 桶仔雞. There’s a mobile crew that sets up on empty lots with a bunch of giant barrels cooking what I imagine is a hundred birds at a time. Quite the sight.
If he’s really been using a tiny toaster oven I wouldn’t use that at all, just skip it entirely. It won’t get hot enough to really cook inside and it’ll just dry everything out or burn the skin. Better just to do everything in the pan, maybe with some stock or wine or whatever.
In tomorrow’s episode of things that are never gonna happen, I’m going to be talking about…
Ok seems the plan has changed. Gonna have a more chilled meal on christmas eve with a carrefor or whatever rotisserie chicken. I’m going to attempt to cook roast potatoes in an air fryer and make coselaw and a salad.
Christmas day is going to be more random. Gonna buy Beijing roast duck, crispy skin pork belly and do some table top grilling.
Carrefour was sold out of whole birds xmas eve day so I settled for a roasted chicken quarter. Crisped it up in the pan and it hit the spot with the the mashed potaters. Probably should have bought two of em.
I went to the ximending location and got the last one there about 6:30.
I’d been scoping out carrefors earlier in the week and saw chickens much later so i dont know if its a location thing or because it was xmas eve.
I’d buy it again though, it had a good flavour and no head and feet. And I didnt get to use the leftover meat( just gave it to my gfs family) for sandwiches which is christmas tradition!
I’m in Taitung and there is just the one Carrefour, for which I am thankful. The RT-Mart is superior and has more selection but it wasn’t going to be a two grocery store day.
