Sweet potato kiln ovens

Does anyone know how those ovens (or kilns) that roast sweet potatoes work? I am doing a writeup and was using the example of this kind of oven but wanted to know how they work.

I believe they work by confining the tubers in a small enclosed area, while heating them to a high temperature.

Thanks for the posts. I guess I was wondering about the process in the oven. Do they put the coals in the oven and get it hot? I heard that after they put the potatoes in the oven they put more coals on top of the potato to get them softer quicker. Is that correct?
