I’m thinking about buying a ticket and then returning it once I get official student status. But I’m afraid to fall into a burocracy rabbit hole. Its my experience so far that once you fall into a category in Taiwan, theres no way to go back and you cant appeal to anyone. So Im a bit afraid.

You might be overthinking this. It’s customary for countries to ask people who enter on a tourist/visitor visa or visa exempt status to prove that they have an onward ticket. In many cases airlines do the verification of an onward flight automatically so that immigration doesn’t have to ask you.

I traveled to Germany and they ask my returned ticket, back to old country they also want to know my returned date.
