Vegetable Beef Soup for the Small Kitchen

I wasn’t going to post this because it seems so easy but - hell - here it is anyway. I made it tonight and it was filling, easy, cheap and fast.

You will need:
large pot
3 potatoes
3 medium carrots
1/2 onion or some onion flakes
1 pound of beef or pork steak
1 can of kernal corn
1 can of peas or a handful of snapped green beans
corn starch

Peel and chop the carrots and spuds into small pieces - think really small.
Cut the beef or pork into very small pieces.
Add it all to the pot.
Pour in the canned corn and peas or the beans.
Dump in the finely chopped onions or flakes.
Add enough water to cover everything. Add garlic to taste. Slow boil it all for about an hour. Add salt and pepper to taste.
Put about 2 Tablespoons of corn starch into 1/2 cup of cold water. Stir to disolve. Pour it into the boiling soup and stir to thicken the soup.

Ready to eat. A sandwich and this will really fill and warm the soul. Grilled swiss plastic cheese on homemade rye bread was mine tonight.
