WCIF 豆腐乳 - a non supermarket version

Pretty specialised request. But I am looking for a boutique sourcing of this particular item. I am after the savoury one, not the sweet one.

Surely there must be some place in Taiwan doing non mass manufactured versions of traditional Chinese condiments…

Yeah it is gross, from memory they use that sweet salty fermented rice stuff to culture it.

One usually travels to Daxi (大溪) for the good stuff.

You can usually sample at Daxi’s dofu stores. If you want the more savory kind, look for the Aged (陳年) keyword and avoid the Sweet Wine (甜酒) variety.

Or you can just buy them online.

my dad loves telling me stories about sometime in the 70s when he was in the US, an African America coworker would often joke about my dad’s aversion to avocados. So one day my dad said I’ll have some of that avocado stuff if you also try some Chinese avocado, which of course was 豆腐乳.
