Where's the best Malaysian or Singaporean food?

Guess my biggest problem with Taiwanese food is that they drench it with a ton of starchy sauce and most of the food is soft and mushy. Soft, short grain rice works well with sushi but sucks with almost everything else. And finding noodles which are al dente… need to know which noodle/ramen shops to go to.

Personally just prefer my food on the dry side with strong spices. Rice and noodles need to be al dente (unless I’m eating sushi)

That said, would guess that I eat Japanese food about 3-4 days per week (great value), sandwich shop maybe 1-2 days per week, Korean 1-2 days per week. Weekends just eat at home or the falafel/Texas chicken place nearby
