Even I went there Sunday evening to see if it was open as I wanted to treat someone to dinner. D’oh! Ended up finding a Japanese-style noodle place not too far away instead, but I didn’t get my pizza fix (and I rarely ate pizza back in the states!)
Well, having worked in pizza joints, I can tell you that the difference in taste between making a pizza skin and immediately cooking it versus letting it sit in the fridge for a few hours is nil. In a blind taste test you would have no idea which was which.
Pizza dough does not go through some sort of Alien transformation several hours (or less) after being created.
Mr Alleycat’s life would be somewhat less hectic if he tried this idea.
I do not advocate pre-cooking, however.
Alleycat, I suppose you won’t reveal your secret and I’m sure I can look it up somewhere, but thought I just might give it a try:

My boyfriend is complaining that I never cook and I was complaining that I can’t cook so many things without an oven. He now wants to buy me an oven
and I’ll have no more excuse not to cook or bake… ![]()
Wolf, you’re missing the art performance aspect of Alleycat’s method. Many of the customers like to watch him kneed and slap their dough. ![]()

Alleycat, I enjoyed your pizza the other night. The ceasar salad was the best I’ve had in Taiwan. And the house red was good and very reasonably priced.
I’ll definitely be back!

I think most people go to Alleycat’s because the pizza is just top notch. Not because he does the “Benihana” of pizza for us.
In the end though, as a business person, he needs to solve his supply problem (e.g. can he keep up with the number of customers?). He is but one person with a limited oven. By shortening the time from order to table, he can move his customer’s out faster and serve more customers per table per day thereby increasing his daily profits. There are a few ways of shortening the process and wolf’s method is one of the easier ones Alleycat can do.
I offer myself as a guinea pig. I’ll be there with two other people at around 8:15pm tomorrow evening ![]()
So, after getting off work early last night at a mere 10:20pm, I decided, bugger taking work home with me tonight, I’m going to go to Alleycat’s! So I rush over to the MRT, hop the train to CKS, walk the twelve miles uphill to Alleycat’s in the desert heat, and find out . . . he’s decided to close! Bugger!
So I walk the fourteen miles uphill back to the MRT in the blizzard, get barked at by an elderly beagle, take the MRT back to my stop, walk eight miles home uphill in the typhooon rain, and go to bed.
A waste of a perfectly good hour and a half, all because Alleycat decided to be an Alleyrat.
I for one am tired of walking sixty miles through mountains in driving hail only to find out that Alleycat has decided to shut down for the evening. I hereby propose that any customer who goes there only to find the place closed take a wee on his doorstep, as I did.

He’s always closed on a Monday. He needs time off to service his mistresses. Did you forget that?
Alleycat’s website says “All week - 5-11 p.m.”
I wasn’t aware that you needed an excuse to pee on his doorstep.
Should we then vote to have the webpage updated to reflect the Sunday and Monday issue? 
I was under the assumption they were open on Sunday because of that “all week” thing on the website. I like the place but staring at the outside of the building isn’t the main attraction. 
Piffle. A few weeks ago, he made a big deal of announcing that they “were now” open seven days a week. Grrrr.
Closing early (or not opening at all) might suck for some, but you must have access to the phone number. It would have took 2 minutes to call and find out if he was open instead of 45 to get there and find out 
We were open until 10:19.
