I trying to make a cookies similar to gingerbread cookies but more puffier. And dough coming out too heavy without baking powder

I don’t know about ammonia but I know my local Wellcome carries baking powder, in packet form (it is with the flours) or in a tiny glass bottle (which is put with the spices), they should all have English on them.

A baking supply shop is the most reliable place to get “baking powder”. See here. Baking soda is more widely available of course.
I heard of baking soda before, but never heard of amonia. That´s what my fishes produce.

It’s called pao4da3fen3 or fa1fen3 發粉/泡打粉; I’ve not heard the other names here. All the DIY baking supply stores have it, and at least some (e.g. the Minquan bridge (Yixing) store and Donghu store, carry aluminum-free BP too. See the big list here with stores sorted by location.

Yes! For the past 3 weeks baking soda has disappeared! Nobody has it anywhere! I’ve looked at Jason’s, city super, Carrefour, wellcome, and other places…nobody has had it for almost a month! Why?
Nevermind…I found it. Finally found some Arm and Hammer Baking Soda at Jason’s tonight. After searching the “baking” area, I asked the manager. He sent me to the household cleaning items…it was next to the bleach.
It used to be in the baking section, but they moved it because he said most Taiwanese associate “baking soda” or “sodium bicarbonate” with cleaning products. So they moved i t to that section for better sales.
However, I still can’t find Taiwanese brand (cheaper) baking soda anywhere.
I think bakers ammonia is no longer sold for that use, I got me some Rumford baking powder a few days ago, 113 grams or 4 oz. for 75 NT$, aluminium free at a bakers whole sale store in Shulin.

It’s available in big bags of Arm & Hammer at Costco, in small local packages at the DIY baking supply shops, and at dry goods (bulk) stores. Ask for su1 da3 fen3 for soda, and pao4da3fen3 for bkg powder.
