I’m looking for the same. Frankly, that sounds like a good deal, apart from the wait. 30%+ of your ticket these days is taxes and fees, so prices are inevitably way higher than they were back in the day.
The flight to Milan through Pudong of Air China is always been the cheapest. You can also fly from Songshan, spend the weekend in Shanghai, then fly to Milan. Last time I paid 26.800 ntd for a round trip.
I flew Korean Air last fall and loved the airline with good rates.
Next time, I’m considering catching a budget airline (like Peach, Scoot, Air Asia…) to a hub (like Tokyo, KL, Singapore) and buying the RT Euro ticket from there.
Feasible but depends on how much luggage you got. For me I always have one more connection from hub in Europe so it ends up better to book the whole thing as one package.
I just booked a ticket on Royal Jordanian from HKG to AMS, cos it was cheap. My problem is, I’m supposed to be in Birmingham, England. Booking the shuttle flight is no problem - but do I really have to go out, collect my luggage, and check back in again? Is it possible to have the airline route the baggage directly from the RJ flight onto KLM (or whatever I end up booking)? Has anyone done this? What’s the procedure?

As far as I can recall, only a “codesharing” Airline can forward your baggage. Not sure who codeshares with RJ?. The other issue is that you will not be insured and Jordanian will have no responsibility,to get you from AMS to UK,should you miss the flight,or it is delayed. It is always better to book the whole journey as one,so the Airline at least has to get you to your final destination for free !.if you can’t change the booking, then try to get a Codeshare Airline with Royal Jordanian to do the onward Flight to the UK. It will be harder and probably more expensive,I fear. Best option is to allow delay time and book a cheap flight from AMS,with an airline flying frequently to UK,in case you miss it. Be careful on luggage allowance, when you book a cheap flight from AMS,as it may be very low.

You should be able to get them to route the baggage straight through AMS, although I’ve never done it. My BHX trips via-AMS have always been with KLM.
But in the past I’ve had separate tickets for the 2 sections TPE-HKG, HKG-xxx-BHX, and always managed to get them to check my bags all the way from TPE.
Leave a good chunk of time for the AMS stopover through, just in case RJ refuse/are unable to check the bags straight through, and you do have to pop out in AMS to get the bags back. That’s the price you pay for cheap flights .
I’ve found that if you book the flight through a travel agent rather than through the airline website, the connecting flights out of Taiwan for HK (if you take an airline like Turkish which doesn’t fly to Taiwan) usually is a very small cost of the entire ticket. Also, you only have one ticket and your luggage can be sent straight through.
Update: got the flight to Paris with AirChina, transfer at Pudong for the going, return through Beijing. Honestly, avoid that option if possible. The transfer in Pudong with CA is a nightmare as you have to pass immigration, collect your luggage and checkin all again. Our Taipei - Shanghai was delayed and we had to rush in Pudong just to discover at the checkin counter that our Paris flight was delayed as well. No information was given in Taipei. The return was ok, connecting time was short and it was good.
The good thing with CA is that they are quite flexible with ticket changes and it doesn’t cost much to do it.
