You absolutely DO NOT eat snails in the wild. You raise them for the purpose. The thing has so much parasite in them, you’d die eating them. Also they tend to bioaccumulate stuff, meaning they could have acquired toxin from their environment.
There’s a reason why these things aren’t kosher.

We have people a couple times a month to trap field rats as well. For food. The snail thing is not from the wild is due to taiwanese not working hard anymore and stricter sanitation standards. It did occur to me that you might just be one of the few people here into eating snails (or selling them for consumption), but you also know what you’re doing and are presumably aware of the risks… so I suspect you don’t really need the repeated warnings either, especially from someone who knows less about the topic than you.

Even if wild snails are used as food, which is still common, the normal protocol is let them be fore a few days to a week specifically for pesticide reasons. Obvious hat isn’t a yreatcmehid, but it’s a well established loose rule. My guess is that people dieing, this shitty rule wasn’t even followed.

Food poisoning could easily (and probably more likely) be bacterial.
Re starving the snails for a while before eating, I think this is so they empty their guts so you dont eat snail shit. IIRC The French simply feed them on wheat flour for a week. I guess they dont mind eating snail shit, but draw the line at eating green snail shit.
I dunno how likely this is to be effective against pesticides, some of which bioaccumulate and persist in the tissues, especially in fats.
The symptoms clearly point to an excitotoxin, and are very consistent with poisoning from organophosphate anticholinesterase agent (like many broad spectrum insecticides, and like military nerve agents). None of these symptoms are seen from any known food poisoning in the bacterial sense.
