Expired Sour Cream - How bad could this get?

Strawberry season has started in Taiwan and a friend gave us a box last night. I found a tub of Sour Cream from Costco in my fridge - it was timestamped to expire last June 2020. I have a “good” fridge (really cold) and the sour cream has been there the entire time. I only ate about 1/3 of it at this point.

When I looked at it this morning, there was a lot of liquid and the cream looked more like cottage cheese. I tasted it, it was a bit sour and figured, “well, that’s why it’s called that” and scooped a few spoonfuls into a bowl. I stirred in 2 teaspoons of confectionery sugar that I bought recently for pancakes. It tasted downright awesome with the sweetness completely masking any sour taste.

I sliced in some strawberries and it was all fantastic. I’m ready for more and I’m sure I can finish off that tub of sour cream this week.

My question: am I an idiot? Will I suffer gastric consequences or worse? Or is there nothing to worry about since, hey, what’s yogurt but spoiled milk so how different could this be?

Can you recommend a food safety website that you consult regularly for questions like this?

I believe it’s just fat separation and can be fixed by stirring it

But I would definitely not eat expired dairy products, especially that far gone
