There is a Yuli style cho dofou place at the hualien night market that would absolutely decimate the tofu when they fried it- beyond crispy. It was so good. Sadly that approach seemed to change.
Cinnamon is a funny one taiwan. Especially as we have many species of it, a couple edible ones. But ya, long history of medicine anf camphor.
But its one of my best sellers here for the last few years. Thanks to coffee shops, indian, thai, mexican/movie theatre, desert/bakery shops apple cinnamon stuff like pizza and mcdlnalds. Its big here, people are now learning new tastes and ingredients of plant based flavors. Historically chinese/taiwanese food culture has been quite bland and few spices (in comparison), but as with everything here thats changing fast!

Chai lattes / iced masala teas / “Indian lattes” showed up at a bunch of tea stands, around five years ago I guess, but they didn’t last long - unfortunately (or perhaps fortunately, considering how much sugar they must include). Unless they’ve reappeared?
Yes but cheaper coffees and lattes with cinnamon arent going anywhere. I think its a price thing above all else. $10 600ml teas are still to be had
