I decided to make some fudge the other day. It turned out so well, I thought I would share (where I found the receipe - not the fudge). I had purchased some of those foil bread pans at my local grocery store. They are five to a pack and can be found almost everywhere. When I was at Costco, I bought some marshmallows and some chocolate chips. You will also need to buy a can of condensed milk but this is easy to find in most local markets. The marshmallows are the large kind and the receipe calls for the small ones but I froze the mallows and cut them in quarters with a pair of scissors for the fudge. I used the fudge receipe on the back of the chip package. I doubled it. You don’t need a thermometer but follow the time limits on the package carefully. I poured about 3/4 inch of the mixture in each of the 5 pans and let it set. Then popped it into the fridge overnight. It was absolutely delicious and now I know what all my friends are getting for Christmas. Now I’m getting other fudge ideas. (Yes, I know, I really need to get a more exciting life) I might try pushing an almond into each of several of the mallows. Line the bottom of the pan with a thin layer of chocolate and place almond stuffed mallows in the bottom of the pan. Pour the fudge mixture over the mallows. Cut individul pieces of fudge, each with an almond stuffed chunk of marshmallow in the middle. Hey, it beats moon cakes all to hell.
