A solution. Condensation is the soggy bastard that makes a food drop a few points. Taiwan has loads of little mini grill type contraptions to let food rest. Forks work, but the proper things are a few tens of nt and worth every penny!
Another cool tip I learned from taiwnaese was using stone to cook in electric ovens, rather than metal pans. A game changer! Especially for pizza and similar things.

Stone or brick lined baking surfaces produce the best crust for sure.
