I don’t think that’s completely true. Ceramic needs preheating and keeps the heat (which should be done anyways for the vessel too.), plastic cools down more rapid during brewing.
That is wrong my friend. Ceramic will continue to grab heat and fluctuate temp during the brewing process, while the plastic will stay more consistent, thus giving you a more controlled brew. Unless…some random person on the internet is more educated on the topic I’ve dedicated several years of my professional life to! Or you could just google it
