I am new to the area, and cannot seem to find a single bar that is close to me that is LGBT (specifically lesbian bars, but if there are only gay bars around the gals have to go somewhere, right??) friendly or focused. Anyone know any places that do not involve a train ride to Taipei? I am in Taoyuan City, but I can always trek to Zhongli, that is not that far.
Yeah, I wasn’t able to find much sifting through the old posts. 
Everything seems to be based in Taipei.

It seems no lesbian bars/clubs in Taoyuan, the nearest one for you might be “the Rainbow” in Hsinchu (新竹市中山路130號2樓, 2F NO.130, ZhongShan Rd. Hsinchu City, phone number 03-526-9792, might ring before you go to check if they are still available). There is one LGBT friendly restaurant in Zhongli named "BMW restaurant (address 桃園縣中壢市大仁四街24號, phone number 03-438-1898).
