All the popular Italian names are already taken by Fashion Stores (Costa, Giordano, Ferrari, Rossi, etc).
For a start, I would not name it something that starts with “Pizza…” cause you will probably also sell different stuff.
And you know Taiwanese house wifes will yell at their husband “nooo, I dont want pizza” when he says “I want to go to Pizza […]”.
The one “pizzeria” which is a good example for a namesake is “Finga’s Base Camp” in Taichung (actually the oldest foreign owned restaurant in Taichung made by a New Zealander).
Another example in Hsinchu (place dropped a bit in quality but servers are still cute) is “Famiglia”.
Based on all that, I’d say, pick something cute… in French! 
If it’s just a hole in the wall place that will do most of its business without customers sitting down (pizza by the slice with only a few seats for sit down) why not call it:
Eat Out Pizza.
Or if you want the female touch with a name:
Momma Juanita’s
And if you need a bunch of foreigners to pose for your opening, we’ll come. Oh and why not call it Paul’s??? They are doing a big opening an dyou may benefit from it.
