You could try some duck breast in orange sauce:

Also as a marinad(t?)e for chicken or pork bits for a quick stir-fry.
Making an omelet? A quick splash over it when finished can give it a bit of an unexpected zing!
For a dessert try strawberries with balsamic vinegar.
I also consider balsamic vinegar as a key ingredient in a tuna pasta salad I frequently make. It’s dead easy. Mix canned tuna, cherry tomatoes, black olives and corkscrew pasta. Then make a dressing by mixing balsamic vinegar with mayonnaise. It’s become my default potluck dish.
