Can you get a heat diffuser?
I used to put a pot in an empty cast iron skillet on top of the flame to even out the heat.
Finally I cut a chunk of ¼" steel plate to use.
There is one called Simmer Mat available online.
yes, I think this is what I need to do. Years ago at a restaurant we did a similar thing. The ideal situation would be to just but a pan with a thicker bottom…but they’re expensive.

LOL. Nope. I braised the oxtails and baked them in the cobbler. /jk

I didn’t know until today, it was so delicious. Right from the garden!
I’m like ewww. But what does it taste like. I’m a bit of a Mikey.
Taste like sage, if you ever had it. But it has a bit of a crunch that adds to it. I like sage, I guess not everyone does. I use it to cook with butter sometimes, the flavor complements each other.
Never had sage outside of the powdered form used on meats. The smell and taste of that makes me a little
