Too much whisked egg whites which create that ‘wobbly’ effect as it’s removed from the oven. It’s way too fluffy. Compared to the New York style cheesecake which is rich and dense with a cookie crust base there is no comparison. It appeals to the local taste and they’re located in (high end) department which gives them an air of respectability. I’ve eaten it several times with the ex and her family and had to nod in agreement how amazing it was. In reality it’s nothing special
I find with desserts like this (whether the fluffy Uncle Tetsu’s or the denser New York style) the key point is pairing it with the right drink: either a nice strong hot hong cha or delicious black coffee (with no added milk as the cheesecake will deliver that milky kick anyways).
With the right drink, either style can taste good!
