Vegetarian food in Taiwan

BUT…here comes my beef…there seems to be no respect for the pure enjoyment of good, fresh vegetables here. In my head I am picturing a plate of mixed vegetables - broccoli, carrots, pea pods, asparagus - sauteed and served with a light, savoury sauce. I have found no such thing in Taiwan.
