Velveeta

Looking for help with Velveeta cheese, even nacho cheese would do. Thanks

You want a meltable cheese, or cheese sauce? I haven’t seen Velveeta, which isn’t really cheese in my book, but Costco has American in slices, or did last time I looked – that’s similar but real cheese.

If all else fails you could melt some butter (e.g. 2 Tablespoons) in a pan. When it foams, add some flour (2 T.), and whisk it for a couple minutes or until it starts to turn golden. Slowly add milk while stirring, e.g. 2 cups, and heat, stirring, until hot but not boiling. Then shredded cheese (e.g. American and Colby or mild Cheddar) a hundred grams at a time, whisking, to melt the cheese, until you get the consistency you want; taste and adjust. That’s just off the top of my head; you could search for a proven recipe if you like, on the internet.
