There is certainly no shortage of ginger, and ginger-derived products on this island, but has anyone seen the candied variety around Taipei somewhere? You know, dry, translucent, sugar-encrusted goodness. 
Um, you basically just boil some young ginger in syrup to make it, just like candied (insert any other word like a fruit peel here). Version two. Version three. It’ll be easier and cheaper to make it than to source it. But if you want to buy it from someone who has already done this, I am told you can contact miao38@ms3.hinet.net to see if she (Miao) will sell you some.
Doh! I never even thought of making it myself…which is odd since we make Taiwan-style ginger tea all the time in winter, and candied ginger is basically just the byproduct of that, which I’ve been throwing out.
Double doh!
