They have shoyu, tonkotsu and sometime fish-shoyu ramen. The noodles are amazing, the chashu rice is fantastic.

Yup, good place. I recommended their Technology Building branch upthread.

Another one I do believe it’s good, since I’ve been to the HK branch, is kikanbo. Haven’t tried yet here due to the omnipresent massive line to enter.

They specialise in spicy miso ramen. The broth is amazing, the noodles very tasty and chewy. The chashu chunky and meaty, not just fat.

I am more of a RAMEN ULTRA man myself (a shop also located in the Breeze complex you mentioned). :yum:

Takin’ notes. What style is it?

RAMEN ULTRA is an outpost of an Akita (northeast Japan) shop which has also expanded, with some success, into California. Other branches are at Nangang Station and at the outlet mall adjacent to Taoyuan HSR Station. They make a big deal of using flour from Hokkaido and not using any GMO ingredients. As a plus, the Taipei Main branch is relatively spacious, unlike the cramped spaces at many if not most ramen joints in Taiwan.

I am especially partial to their “creamy” soup (yes that’s what it is labelled on their menu), which I believe is a blend of pork tonkotsu and chicken broth, with a nice use of pan-fried shallots to season the soup. They do go overboard on the green onions, so I always tell them to reduce that ingredient, or I simply remove the excess amount. Aside from that quibble, this is my go-to shop for ramen in Taipei.
