The Forumosan Recipe Thread

I was invited to a New Year’s Eve dinner and wanted to take something special. I made a cheesecake with coconut cookie crust, then got the idea to top it with homemade guava paste. Wow, it takes a long time to cook guava paste because it’s basically guava candy.
Guava paste
2 pink guavas, peeled chopped, seeds removed and saved.
Put the seeds in a bowl with 1/4 cup of water.
Simmer the chopped guava until soft with 1 cup of sugar and 1/2 cup of water until soft.
Puree the simmered guava and put back into the pan
Either juice or blend and strain the seeds. Add the juice to the pureed mixture and simmer until it is almost candy. A small drop on an ice cube turns solid.
Beat guava paste in a bowl with a wooden spoon for 5-10 minutes.
Put the paste into a plastic lined dish and chill.
My favorite way to eat guava paste is with a salty cheese on a cracker or grilled into a ham and cheese sandwich. Great with cream cheese on a bagel too.
