Might help to marinate the chicken overnight (in your fridge) in a marinade you like. Ime even sour pickle juice makes a fine marinade for chicken in a pinch. The salt in pickle juice also makes the chicken juicier when fried.

Iā€™ve used fish sauce in my Tuna salad and red pepper sauce. Itā€™s excellent in both. Highly recommend using in other dishes.

There is an ostrich farm near me, we went and ask them for an egg. 30 euros for 1 egg, but it might be a few weeks before they have any.

And what do you make with an ostrich egg?!?!

Maybe a giant omelette?

30 euro for an egg? Ouch! Is it fertilized and maybe they sell them somehow to farmers? Thats pretty insane. Here they are pricey too but dont think i ever paid more than 200ntā€¦ But when breeding them they jack it way up.

Idk, I just asked them for an egg. They said they will give me 1 for 30 euros. I donā€™t think thatā€™s their business so maybe why.

I was invited to a New Yearā€™s Eve dinner and wanted to take something special. I made a cheesecake with coconut cookie crust, then got the idea to top it with homemade guava paste. Wow, it takes a long time to cook guava paste because itā€™s basically guava candy.
Guava paste
2 pink guavas, peeled chopped, seeds removed and saved.
Put the seeds in a bowl with 1/4 cup of water.
Simmer the chopped guava until soft with 1 cup of sugar and 1/2 cup of water until soft.
Puree the simmered guava and put back into the pan
Either juice or blend and strain the seeds. Add the juice to the pureed mixture and simmer until it is almost candy. A small drop on an ice cube turns solid.
Beat guava paste in a bowl with a wooden spoon for 5-10 minutes.
Put the paste into a plastic lined dish and chill.
My favorite way to eat guava paste is with a salty cheese on a cracker or grilled into a ham and cheese sandwich. Great with cream cheese on a bagel too.

I made Italian mixed with some Cajun Mac and cheese.

Used Parmesan cheese, fresh mozzarella, and pecorino cheese.

And some smoked Italian bacon with Cajun seasoning I added.
