Never been to Nomad, but sounds very promising.
When I lived in Taichung there were 3 options, and they were all pretty terrible.
A friend owns a bar here in Linkou called Cheers that has some pretty good TexMex (burritos, chimichangas, tacos both flour and corn).
Also, I had some amazing tacos in Taitung a couple years ago from a food truck. Anyone aware of the name? I’d love to have them again next time I’m on the east coast…

This may be answered somewhere upthread, but is delivery just local UberEats / FoodPanda stuff, or can frozen food be delivered out to distant territories like Danshui?
